Cuts Made Easy |
We raise grass-fed, natural
beef (no hormones, no antibiotics). It is leaner
than what you get in the grocery store and has a
higher yield than grain-fed beef. We are a small
producer and rely on word of mouth to sell our beef to
individuals. Currently, we can only sell to be
processed in the state of Colorado.
Pricing is
based on current auction and USDA live weight sales
price around the time of delivery to the
processor. It is important to note that if the
purchaser orders a ¼ beef, it is considered a ½ of a ½
so each person who shares a half gets equal portions
of tender cuts, etc.
In addition to the live weight cost, there are
the processing fees, which would be paid directly to the processor when
you pick up your portion. You would work with the processor to
determine size (thickness) of steaks, how many (if any) roasts, size of
hamburger packages, etc.
Our beef yield (live weight to actual take home
weight) is about 45% to 55%. In contrast, grain fed beef yield is
about 35% to 40%. We have calculated that on average, the
purchaser's total cost ends up around the $3.50 to $3.75/pound range
(about the same or a little less than top grade hamburger at the
store).
